What You’ll Need

Cake:

  • Two cups of all-purpose, or general-purpose flour
  • 3/4 cup of cocoa unsweetened powder
  • Two teaspoons of baking soda
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups of granulated sugar
  • 1/4 cup vegetable oil
  • 2 large eggs at room temperature
  • 1 cup of buttermilk at room temperature
  • Two teaspoons of vanilla extract
  • 1 cup hot, strong cup of coffee

To make the chocolate ganache:

  • 18 oz semisweet chocolate chips
  • 1 1/2 cups heavy whipping cream

How to:

  1. The first thing to do is to heat your oven to 350F (175C). Grease two 9-inch cake pans before lining them with parchment. Put them aside.
  2. Within a bowl combine 2 cups all-purpose, 1/3 cup of unsweetened cocoa powder 2 teaspoons baking powder as well as 1 teaspoon baking soda. Add 1 teaspoon of salt as well as 1 1/2 cups of granulated sugar before mixing everything. Once the mixture is completely blended then set it aside.
  3. In a separate bowl, mix 1/2 cup vegetable oil, and two large eggs. In a third bowl, add 1 cup of buttermilk as well as 2 teaspoons of vanilla extract. Whisk again.
  4. Mix the wet ingredients and dry ingredients. Combine everything until well combined. Pour it into the hot coffee cup and stir once more. This batter must be smooth.
  5. Divide the batter equally between the two pre-greased cake pans. Bake for around 30 minutes, or till a toothpick stuck into the middle is clean.
  6. After the cakes have been baked remove them from the oven and let them cool for 5 to 10 minutes. Transfer them to a rack of wire and allow them to completely cool.
  7. For the ganache to be made, mix the chocolate chips into the bowl.
  8. Put 1 1/2 cups heavy cream in a saucepan and heat it until it begins to simmer. Sprinkle it onto the choc chips.
  9. Allow it to sit for approximately 5 minutes. After that, mix the chocolate and cream until you have an even mixture. Allow it to cool completely before chilling it for 20-30 mins.
  10. Once you’re ready you can whip the ganache with the aid of a hand mixer or stand until you have stiff peaks. Be careful not to overmix, however.
  11. To put the cake together to serve, place the cake on a platter, with the top facing down. The top is covered evenly with 1/3 of the ganache that has been whipped.
  12. The second layer should be placed on top of the ganache, with the top facing down. Make use of the remaining ganache to cover all of the cake. Spread it evenly.
  13. Serve and take pleasure in it!
